Sweet and Sour Prawns

It's so easy to make your own sweet and sour stir fry, once you've tried this recipe you'll never buy another sachet or jar of pre-made sweet and sour again! This is super healthy and tastes so fresh and delicious it really gives you that feel good factor!

Time: 20 Mins  Serves: 2 


  • Place the wok or frying pan over a medium heat with the coconut oil and allow to heat up. If you are having rice with your sweet and sour prawns, now is the time to pop that on to cook.
  • Chop the peppers, onion, babycorn and courgette into strips and add to the pan.
  • Stir well and allow to cook for about 5 minutes, stirring all the time.
  • Now it's time to add the seasonings, stir in the corriander, ginger, salt and pepper then stir well again to coat all the veg.
  • Next, add the tomato puree, cider vinegar and the honey.
  • Again stir well and allow to cook for another minute or two.
  • Add the prawns and edamame soy beans and make sure the prawns are cooked through and piping hot before serving!

  • 1/2 Red pepper
  • 1/2 Yellow pepper
  • 1/4 Courgette
  • 8 Babycorn
  • 1 Red onion
  • 70g Edamame soy beans
  • 160g Prawns
  • 1tbsp Tomato puree
  • 1/2 tsp Ground corriander
  • 1/2 tsp Ground ginger
  • Salt and pepper
  • 1 1/2 tsp Cider vinegar
  • 1 1/2 tsp Honey
  • 1 tbsp Coconut oil
  • Wild or brown rice to serve
