'Lighter Fruit Loaf'

For me, there is no smell better than that of a fruit cake cooking. This loaf combines the traditional flavours of a festive fruit cake with some healthy alterations! All the sweetness comes from fruit with no other sugar added to the recipe, a slightly healthier spin on a festive favourite! 

Time: 1hr 45Mins (Plus time for soaking the fruit) Serves: 10



  • Heat the oven to 180 degrees C. Grease and line a loaf tin.
  • Brew the tea then pour over the dried fruit and chopped dates. Leave to soak for at least an hour.
  • Whisk the bananas with the eggs to make a smooth mixture.
  • Add the flour, baking powder, nutmeg and mixed spice to the egg mixture as whisk again until everything is combined.
  • Pour the fruit with the tea into the flour and egg mixture and mix well.
  • Pour the cake mixture into the lined loaf tin then cover with baking parchment.
  • Place in the over and bake for 1 hour 15 minutes then remove the baking parchment and bake for a further 15 minutes.
  • Remove from the oven and allow to cool for a few minutes before lifting onto a cooling rack.
  • Once cooled, store in an air tight container.


  • 260g Mixed dried fruit (raisins, sultanas, currants work well)
  • 55g Dried dates (roughly chopped)
  • 200ml Strong tea
  • 2 Very ripe bananas
  • 2 Medium free range eggs
  • 250g White spelt flour
  • 2tsp Baking powder
  • 1/2 tsp Nutmeg
  • 1 tsp mixed spice
